Head Chef

The head chef is the top person in the kitchen and highly respected by those who work under his or her wing. A top hotel chef or the equivalent in a restaurant will be someone who has worked their way up, gaining a reputation. References are all important, and whilst the catering guru might have extensive experience, there is also a need for the basic requirements of catering skills including food hygiene and food safety standards. The head chef will also be aware of nutrition and the various ways in which different ingredients interact
This career position involves great determination, creativity and a high degree of culinary skill, some aspects of which will be taught in vocational catering college, but much is down to the chef’s ability to produce fine food in keeping with customer expectations. In a good restaurant, the chef will earn around £40,000 per annum or more, but average salaries range between £24,000 and £30,000.

  • Sous to head chef Odell

    I've been working as a sous chef for 5 years now, and I have the hope to move on to become a head chef. How can I know whether I'm prepared and will succeed?

      This is difficult to say as I don't know you or the way you work. Still, what I'd say is that if you really want to try, there's no better way than applying to several job openings and seeing what feedback you get. In the worst case scenario at least you'll be able to ask what it is you're still lacking to take the final plunge.

        Thank you Kevyn. I'd considered what you suggest, it's just I backed down for fear of loosing it all, current job and possible job as chef. Agghhh I don't know what to do!

          I know the decision is tough, but you know the old saying 'no risk, no gain'. Maybe, if you're weary about it, it means that it's still not your time, that you're still not confident enough. Though if you ask me, with time I've come to the conclusion that if you want something bad you've got to make a move, not doubt too much, and once you're reasonably sure, take the plunge! Consider your timing and whether you feel confident, and then ACT!

            Thank you Kevyn. I suppose your right, I'll do as you say. It's just I'm getting married in less than a year and I wouldn't like to make a mistake. I'll give it a thought and see. Many thanks for your advice.
